Note: This drawing is now closed. JustcookNYC on a diet? No, that’s not happening, but this recipe for Pork Chops with Maple-Glazed Apples and Polenta comes from the brand-new book, The Joy Fit Club. If you don’t already know, Joy Bauer hosts a great segment on the Today show, featuring dieters who have lost more than 100 pounds. The book, publishing this week, features incredibly inspiring stories of the dieters, great tips and advice for weight loss, and recipes too.
A bonus to this recipe for me — it’s gluten-free. You make polenta seasoned with sage. The boneless pork chops, trimmed of excess fat of course, are seasoned with salt, pepper, and smoked paprika. After you cook the chops, you add sliced apples and a little water to deglaze the skillet. Just before serving, you toss the apples with maple syrup (mmmm!). It’s such a great combination of flavors and textures, whether you’re trying to lose weight or not, this is great food. If you’re still reading (and live in the U.S. or Canada), post a comment here if you’d like to be entered into a drawing for a copy of The Joy Fit Club. A winner will be chosen randomly at the end of the day on April 26. Good luck!

It sounds really promising; I could use a cookbook like that!
This is fantastic… i’ve also lost over 100lbs from just eating right and working out… i failed at my first attempt of pork chops.. they were too dry. This would be a fun book to have!

Ooo this book is on my Wish List!
Hello, I am 39 years old and I have breast that are in need of reduction. I have a tear between my L-4 and L-5 and it has almost literally caused me to lose my job. I am a Paramedic and after 3 months total out of work last year, I am dispatching at my service now. I don’t know if I will ever work on the truck again and I have become depressed because I have a significant amount of weight from the steroids. I am unable to do any type of activity due to my back only ride a stationary bike. I need help and I have spent already over $700 on diet fads this year alone. I would like to enter to win the book if possible. I can’t have breast reduction without losing the weight first because the insurance calls it “cosmetic surgery”…..REALLY! I have been battling this pain for 5 years and I am not getting any younger and I want to have a life.
I like Joy Bauer alot…I think she has a no-nonsense, non-judgmental way of getting her message across. And, it’s very do-able. Throwing my hat in the giveaway ring.
