Another post about Lucinda Scala Quinn’s Lucinda’s Rustic Italian Cooking? I watched that video again, and I decided I had to try the meatloaf. Lucky for me, I’d bought some pistachios yesterday, and I picked up the rest of the ingredients at the market this afternoon. Besides a little chopping, it was just as easy to prepare as Lucinda promised. There is no way the photo does this meatloaf justice. No, I’m not exactly a meat eater, but I did try it and, as Devyn and Jen can testify, this is a really fantastic meatloaf recipe. If nothing else, it’s the juiciest meatloaf you’ll ever try, but that doesn’t do it justice either. Crusty on top, rich and moist from the mortadella, ground pork, and ground beef mixture, definitely worth a try.
