Oh come on, try to tell me you don’t like eating and ordering mahimahi just because you want to say the name of the fish out loud. I had the added bonus of finding it on sale at my local supermarket today, with a recipe in hand from Sam the Cooking Guy: Just a Bunch of Recipes. You saute some diced peppers to start, then salt and pepper the fish, and cook it for about 5 minutes per side. Then you make a super-easy sauce by simmering together some sour cream with salsa verde, and that is one really easy and tasty dinner. It looks pretty too.
