The Sweeter Side of Amy’s Bread calls these their “Award-Winning Brownies”. Now that I’ve made them, I understand why. Seriously, these brownies will blow you away. It’s worth the price of the book for this recipe alone. Not that you’ll be surprised about the results when you see the recipe — 1/2 a pound of butter, 1 1/2 pounds of chocolate, only 1 cup of flour.
With all that chocolate and so little flour, you can’t rush these. After you bake them up, the texture is really crumbly. While they’re still hot, you can barely cut out a square to try. (And I know how tempting that can be.) Let them cool. No really, let them cool and then put the whole batch in the fridge overnight. By the next day, they’re incredibly rich and dense, like my brownie dreams come true.
