Check out this bacon gift-giving round-up on Serious Eats, featuring one of my favorite cookbooks, The Bacon Cookbook by James Villas. It goes a long way to make up for the above recipe I got from their site the other day. The recipe, adapted from the Babbo web site, sounded great, but it was a mess of errors. I don’t want to sound like a Serious Eats hater, because I’m quite the opposite. As you may have noticed, their’s is the only RSS feed on my blog.
Anyway, the recipe was for pasta all’Amatriciana. Actually, the headline said spaghetti, but the photo showed ziti. Bucatini is traditional, and I went with another shape altogether. It’s no matter — you start off cooking up some bacon with ribbons of onion, garlic, and red pepper flakes. I opted to add 14 ounces of crushed tomatoes, although the recipe posted was a little vague about that part as well. Cook it down, toss with pasta, and finish with chopped parsley and grated Romano cheese, and you have an incredibly satisfying, and easy-to-prepare dinner that your friends and family will love you for.
