so easy but so good cookies

Jason and Mika threw a beer party over the weekend. I didn’t know it when I first started shooting with Jason, but it turns out he’s quite the brewer. I couldn’t tell you a thing about the beer-making process, but I was thoroughly impressed with every batch I tried. I’m partial to the dark Belgian, but the passionfruit beer was a hit with the girlfriend. If you’re like me, then when you get a party invite, the question is what to bring. I was planning on making a dip, but then I thought something snacky (grab-able) would be better. I had some cheddar cheese in the fridge and started searching my cookbooks for a cheddar cookie recipe.

The recipe came from Sally Sampson’s Recipe of the Week: Cookies, with a little Hungarian paprika added (inspiration thanks to a Nick Malgieri book). They were just right (lightly cheese-y and crumbly), and they were so easy to prepare. It’s pretty much flour, cheddar cheese, and butter. The cookies were a hit with the geishas (you had to be there…), and fortunately I made a double-batch for snacking all weekend long.
