Ellie week — lamb & feta pita pizza

This drawing is now closed. In honor of Food Network star Ellie Krieger’s newest cookbook, So Easy, being published and Ellie appearing on the Today show on Monday, this is going to be Ellie week on Justcooknyc. Post a comment if you live in the U.S. or Canada and want to be entered in a giveaway for a copy of the new book and be sure to check back for more Ellie posts this week and more giveaways. You can enter once for each post.

I’m cooking up a storm from Ellie’s new book, and good-for-you-or-not, dinner doesn’t get much better than these lamb and feta pizzas. Just like the title of the book says, these are “so easy…”

You start by browning some ground lamb with onions. Then Ellie tells you to drain off the fat, and you add chopped plum tomatoes (canned, diced tomatoes would work, I think). Then for the magic — along with parsley, salt and pepper, you add ground cinnamon. This does wonders for the lamb and will make your dinner guests swoon from the aroma.

Here’s the super easy part — you spread the lamb mixture on whole wheat pitas (that you’ve brushed with olive oil) for an instant crust.

Then add feta cheese (my market had some yummy flavored fetas, but the regular stuff will do fine) and pine nuts on top and pop your “pizzas” in the oven for about 10 minutes.

I suggest eating these straight from the oven, because the thin pita crust doesn’t hold heat for long. Oh, and call me to come over for dinner, because I can’t get enough of these. In fact, I made a double batch of the meat and bought extra pitas so I can make some more tomorrow night.

  1. Those look great! I've only had the chance to see Ellie's show on the Food Network once, as it's not usually on in Canada, but it looks like her new book will be great (judging by this recipe!)

  2. I just got Ellie's new book in the mail yesterday and I am in love with it. Everything is literally "so easy" and looks great. I'm glad to hear these pita pizzas were delicious, they look and sound wonderful. I'm looking forward to further posts from this book – yum!!

  3. Wow – Healthy AND Tasty! Love it! I made her chicken and spinach dish a while back and our family went crazy over it. It was really tasty and I was so happy to realize that healthy food doesn't have to taste bland. 🙂

  4. I like Ellie Krieger. She's definitely got some appetizing recipes. I also like using pita bread as a crust for pizza. I'll have to try this one out soon.

  5. I saw her do a cooking demo and book signing here in Boston! And I did a ghetto re-creation of the recipe she made (beef and butternut stew) and it was unnnnnnreallllll. She is spectacular.

  6. You had me at "Ellie week". I love her! I have her first cookbook and thoroughly enjoy her healthy takes on desserts and sweets. I make her pancake recipes all the time. Lamb pizzas sound great. I need this new book 🙂 ps: you must check out L'Arte del Gelato. I think there is one in the Chelsea Market as well.

  7. hey, everyone, thanks for all the comments. there are almost too many to reply to, but Lele, glad to hear you saw Ellie in Boston. I'm making that stew this week — I bought all the ingredients already. To everyone else, thanks for visiting, and you'll all be entered in the first drawing.

  8. I made several of Ellie's dishes and they've been great. These pita pizzas look delish…I've used pitas for pizza, but not with these flavors. I'd love her cookbook!

  9. Wow, these sounds delicious. I love that they're (kind of) like an open faced euro…bet they'd be good with a little tzatziki drizzled over in the end. I want to try these! And I'd love to be entered to win the cookbook.

  10. Oooh, lamb! I've been trying to come up with something silly to say since pita and pizza are such similar words, but pitza doesn't sound that appetizing. Anyway, I'd love a copy of the book 🙂

  11. wow, great response everybody. ellie sure has a lot of fans. too many comments to reply this time, but i do think pitza is a common term for this kind of thing. i've seen that on restaurant menus.

  12. I have never been to your site before but I am glad I found it. Your pictures are really great and I find it interesting to follow along in your journey on publishing cookbooks. I hope to be able to do that some day myself so I will be coming to you for inspiration 🙂 These pizza's look awesome, I had something very similar last weekend at a Mediterranean store and loved them. Thanks for sharing!

  13. everyone, again, the comments have been a bit too fast and furious for the Ellie Krieger giveaway for me to reply to everyone like I normally do, but thanks. I'm going to post another Ellie Week entry and giveaway today.
