Ellie week — lamb & feta pita pizza

I’m cooking up a storm from Ellie’s new book, and good-for-you-or-not, dinner doesn’t get much better than these lamb and feta pizzas. Just like the title of the book says, these are “so easy…”

You start by browning some ground lamb with onions. Then Ellie tells you to drain off the fat, and you add chopped plum tomatoes (canned, diced tomatoes would work, I think). Then for the magic — along with parsley, salt and pepper, you add ground cinnamon. This does wonders for the lamb and will make your dinner guests swoon from the aroma.

Here’s the super easy part — you spread the lamb mixture on whole wheat pitas (that you’ve brushed with olive oil) for an instant crust.

Then add feta cheese (my market had some yummy flavored fetas, but the regular stuff will do fine) and pine nuts on top and pop your “pizzas” in the oven for about 10 minutes.

I suggest eating these straight from the oven, because the thin pita crust doesn’t hold heat for long. Oh, and call me to come over for dinner, because I can’t get enough of these. In fact, I made a double batch of the meat and bought extra pitas so I can make some more tomorrow night.

  1. Those look great! I've only had the chance to see Ellie's show on the Food Network once, as it's not usually on in Canada, but it looks like her new book will be great (judging by this recipe!)

  2. I just got Ellie's new book in the mail yesterday and I am in love with it. Everything is literally "so easy" and looks great. I'm glad to hear these pita pizzas were delicious, they look and sound wonderful. I'm looking forward to further posts from this book – yum!!

  3. Wow – Healthy AND Tasty! Love it! I made her chicken and spinach dish a while back and our family went crazy over it. It was really tasty and I was so happy to realize that healthy food doesn't have to taste bland. 🙂

  4. I like Ellie Krieger. She's definitely got some appetizing recipes. I also like using pita bread as a crust for pizza. I'll have to try this one out soon.

  5. I saw her do a cooking demo and book signing here in Boston! And I did a ghetto re-creation of the recipe she made (beef and butternut stew) and it was unnnnnnreallllll. She is spectacular.

  8. I made several of Ellie's dishes and they've been great. These pita pizzas look delish…I've used pitas for pizza, but not with these flavors. I'd love her cookbook!
