best brownies ever


I know, I know, “best ever” is a big claim. Food bloggers make it all the time. I make it all the time.  But if the Intense Chocolate Brownies recipe in Flour by Joanne Chang isn’t the best ever, it comes really close. The texture is amazingly moist, but not ridiculously so. The chocolate flavor is deep. And maybe best of all, you get that cool shiny thing going on the top. It reminds me a little bit of those packaged brownie mixes, not that I make them, but I’ve seen photos of them in advertisements. Well, that’s all there is to say. And the “best ever” thing isn’t even my own assessment. I brought a bunch of these to the office, and a few of my coworkers said they were the best thing I’ve ever baked. I bake a lot, so that’s kind of a big deal. If for some crazy reason you haven’t bought Flour yet, I urge you to check it out. And if you’re lucky enough to live in Boston where you can visit one of the Flour bakeries, save me a sticky bun.

  1. The look so dense and chewy… nommers, I had a brownie here in Japan and while I quite like many French/Japanese pastries…they missed the boat on the brownie.. care to ship me a slice, piece, or the whole tin?

  2. I giggled aloud at the “not that I make them”. In my mind, that shiny top that crackles when cut is absolutely the lynchpin of great brownies. Bookmarked.

    1. i know what you mean, but honestly, my brownies rarely have that shiny top. i used to think it was some strange chemical thing that homemade could never achieve, until i saw these

  3. I’ve been in lust with these brownies for aaages. They’re the main thing keeping me copacetic about the prospect of moving home (to Boston suburbs) for the summer to study for the bar exam. Maybe I’ll bring up some from Baked when I go and have a taste test…

  6. Looks like another winner from Flour. That book is seriously amazing! I made the granola from it this weekend and fell in love with the book all over again. From this, looks like I will be making the brownies very soon too.
