recipe girl’s really good risotto


This drawing is now closed. The great thing about working with Matt Armendariz to photograph my books is that he’s so amazingly talented, I don’t have to be there on set, and everything still turns out beautifully. That’s certainly the case for the photos by Matt in the new book by Lori Lange, The Recipe Girl Cookbook. The bad thing is that because Matt works out of Los Angeles, and I work out of New York City, I don’t get to be on set and eat all of the yummy food! (Also Matt is a really cool guy, so I miss out on that too!) Fortunately Lori’s new book is in stores now, and I brought a copy home to start cooking my way through it. The Tomato-Mascarpone Risotto was calling my name. These are just my snapshots of course. Please check out the real book if you want to see Matt’s amazing photos. About the recipe, it may look straightforward, but there are 1 1/2 cups of shredded zucchini mixed in there which I loved. Yes, like all risottos, there is a lot of stirring involved, but it’s worth it.


The special thing about the recipe is the mascarpone you add at the very end. I tasted it first, and the risotto is great without it. But with the mascarpone, it turns a bit decadent, making it a great dish for a romantic dinner perhaps. I mean, what’s sexier than someone making risotto for you? Not much…

  1. I’ve never had risotto, much less cooked it, but after seeing numerous instances of it on TV I must give it a try!
